Paleo Pumpkin Poop Recipe

These Paleo Pumpkin Poop cookies may sound odd, but they are chewy and moist and perfect for fall!
  • 2 eggs
  • 1 cup cooked pumpkin
  • ¼ cup honey
  • ½ teaspoon vanilla
  • ½ teaspoon ground ginger
  • ½ teaspoon cinnamon
  • ⅓ cup coconut flour
  • 1 cup shredded unsweetened coconut
  • ¼ cup raisins (optional)
  • ¼ cup raw pumpkin seeds (optional)
  1. Preheat oven to 350 degrees
  2. Line a large cookie sheet with parchment paper
  3. Crack your eggs into a medium sized bowl and mix with a fork.
  4. Add pumpkin, honey and vanilla to the eggs and mix well.
  5. Add in the coconut and coconut flour and stir until well combined.
  6. Add the raisins and raw pumpkin seeds.
  7. Your batter should be thick enough to hold it's shape (if it's not, add in a tiny bit more coconut flour), so now you get to be creative and mold it into poop shapes. Be creative! Have fun! I liked making them into little logs.
  8. Place each pumpkin poop on the parchment-lined cookie sheet. These will not expand a whole lot, so you don't have to worry about spacing them very far apart.
  9. Bake at 350 degrees for 15 - 17 minutes. They are done when they are firm to the touch and the underside is golden brown.
